My Journey
I began my vegetarian journey two and a half years ago and transitioned to vegan almost a year ago. I'm a single mom of four boys (always on the go). My biggest struggle in Toledo Area is, the scarce vegan options, let alone a Vegan Restaurant/Catering. I was exhausted with trying to find something on the go for my family. I started cooking more at home to accommodate them. Surprisingly, I enjoyed it! Finding new recipes and creating vegan dishes was challenging, yet excitingly fun. I found myself cooking all the time especially because my children were the ONLY vegetarian/vegan children in their school/daycare. Go figure, Right!? Everyday I prepared their lunches, brought it to them around lunch time so they would have healthy food that was hot, fresh and tasty! Breakfast and Lunch were taken care of; and unless I made enough leftovers for lunch, dinner was still an issue. Let's be honest cooking is time consuming in this day in age and not necessarily convenient.
I went to a New Year's Fundraiser Party for Battered Homeless Woman and Children in Atlanta, GA. The host spoke with the guest and gave an insight about his life and his journey to becoming successful. Towards the end he mentioned that he wanted to give back. Asked the guests did anyone have a business, idea, and or business plan and mentioned he would be willing to invest certain amount. From that moment, my idea was born! To have good tasting, healthy food, followed by convenience with out harming animals and economically reducing waste on the planet, I mean WHY NOT! I was on to something, and nothing was stopping me!
I was already living the lifestyle. I wondered how many others were going through the same thing I was, and how I could help. Here I am providing a solution to those in need and looking to start a more healthier way of life on the go!
