I began my vegetarian journey two and  a half years ago and transitioned to vegan almost a year ago. I'm a single mom of four boys (always on the go). My biggest struggle in Toledo Area is, the scarce vegan options, let alone a Vegan Restaurant/Caterer. I was exhausted.......
